- 10.5 oz mushrooms (fresh)
- 1 1/4 cups water
- 1.5 tbsp butter
- to taste salt
- to taste extra virgin olive oil
- 1.75 oz bread croutons

Procedure
To make this creamy mushroom soup, you can use the mushrooms you prefer; the flavor varies depending on those you use. The cost of the dish also varies depending on the mushrooms; champignons or Pleurotus are easily available and cost much less than fine mushrooms like porcini or chanterelles.
Clean the mushrooms by removing external impurities and cut them into thin strips.
Sauté the mushrooms in a pot with a knob of butter (or extra virgin olive oil) and brown them over high heat for a few minutes.
When they are golden, add the cold water so it sizzles and extracts the flavor.
Continue cooking on low heat for 10-15 minutes so that the broth gets flavored. Then blend the mushrooms to get the creamy soup.
