Here are the times and steps to follow for boiling fresh beans to perfection. These steps apply to all types of beans, such as borlotti or Spanish beans.
These steps are also suitable for exotic varieties like black or red beans.
If you’re using fresh beans, remember that about 50% of the weight is the shell. So to get 500 g of fresh beans, you’ll need to buy about 1 kg.
After removing the pods from the beans, you just need to start cooking.
Place them in a pan and cover them with 2 fingers of room temperature water. You don’t need more, otherwise, it will take too long to start boiling.
When the water starts boiling, lower the heat and continue cooking with the pot semi-covered. Do not add salt or it will harden the shell.
Do not place the beans in boiling water because this will also harden the shell.
Cook for 30 minutes from when it starts boiling. After this time, taste the beans, if they are ready, you just need to turn off the heat and drain.
If they are not ready yet, extend the cooking for another 10 minutes and taste again.
