Instructions

Chicken bites are a quick main dish, and cooking them in lemon makes them particularly flavorful with a fresh note perfect for summer. Here are the steps to make them at home.

  • You can use either the thigh or the breast; I suggest you use the breast as it is quicker to prepare, and if you cook it well, it will not be dry at all.

  • Cut the chicken breast into uniform cubes about 1 to 1.5 inches thick. The uniform cut is important for proper cooking; otherwise, small pieces will be dry and overcooked, and large pieces will be raw in the center.

  • At this point, place a pan over high heat, add a drizzle of oil, and heat. When hot, add the chicken bites and sauté over high heat for a few minutes.

    It is important to have a lively flame to seal the outside of the chicken and retain the juices inside.

  • When the chicken is cooked, add the lemon juice and let it thicken gently.

    If you want a creamy sauce, you can coat the chicken in all-purpose flour before cooking or add half a teaspoon of flour to the pan to thicken the sauce. I prefer to do without flour; it’s easier and faster.
