Procedure

Prepare your lemon tart following these simple steps, and you will delight the palate of all your guests! In the recipe, you’ll find advice for starting from scratch or using ready-made ingredients.

  • For the tart base, you will need flour, butter, sugar, and a pinch of salt. Mix the ingredients until you obtain a homogeneous dough, then roll it out in the tray and bake until golden brown.

  • For best results, I always recommend letting the pastry rest in the refrigerator for at least 30 minutes before rolling it out in the trays.

    With this amount, you can make a single 8-inch tart or 4 mini tarts 4-5 inches each

  • In the meantime, prepare the lemon curd by mixing fresh lemon juice, grated zest, sugar, and egg yolks in a saucepan. Bring to a boil over medium heat, stirring constantly until the cream thickens.

  • Bake the pastry for 30 minutes and remove from the oven when done.

    Pour the cream over the already baked base and let it cool in the refrigerator for at least a couple of hours. Before serving, garnish with grated lemon zest and powdered sugar.

  • Now that the tart is ready, all that’s left is to top it with meringue and torch it for that classic toasted appearance.
