Ingredients for 4 people

  • 2 cups cups whole milk
  • 6 eggs
  • 1/2 cup sugar
  • 1/3 cup raisins
  • 2 espresso cups rum

Procedure

To make the perfect malaga ice cream, start from the base of classic custard ice cream, then add rum and raisins. Here are the steps to follow to prepare it at home.

  • For a good custard ice cream, you need eggs. If using fresh ones, separate the yolks from the whites. We’ll only use the yolks for the custard; with the leftover whites, you can make delicious desserts or meringues.

    You can use pasteurized egg yolks; 120 g will suffice.

  • Pour the eggs into the milk, add sugar and rum. If using fresh eggs, it’s important to cook the mixture up to 180°F to pasteurize them. It only takes a couple of minutes, be sure to stir continuously to prevent it from sticking.

    How do you know when it’s reached 180°F? When it starts to simmer and the spoon remains coated when dipped in the custard, meaning it doesn’t slide off.

  • At this point, the ice cream base is ready. Let it cool in the fridge before putting it into the ice cream maker.

    Start the ice cream maker and cool following the ice cream mode. It will take about 20 minutes.

    When the ice cream is almost ready, add the raisins. If you don’t have raisins, put some dried grapes in a glass of Moscato for 1 hour.

  • Your malaga ice cream is ready; all that’s left to do is serve it!
