  • 1/2 cup fresh cream
  • to taste extra virgin olive oil
  • to taste salt
  • 1 tablespoon green peppercorns

Procedure

The secret to a good pork tenderloin with green peppercorns lies in the cooking of the meat and the creation of the cream and green peppercorn reduction. Here are the steps to follow

  • First, I recommend cutting the pork tenderloin into medallions (about 1-1.5 inches thick). For optimal cooking, the meat should be at room temperature, so take it out of the refrigerator at least 30 minutes before cooking.

    If you’ve used green peppercorns in brine, just add a little salt. If you’ve used dried peppercorns, salt the meat at the end of cooking.
