Ingredients for 2 people

  • 7 oz lentils
  • 1 carrot
  • 1 red onion
  • 1 stalk celery
  • 1.5 cups water
  • to taste salt
  • 1 leaf bay

Procedure

The preparation may vary slightly depending on the type of lentils you are using. Use these tips if you are using dry lentils, with the cooking times found below

  • First, prepare an Italian soffritto by cutting celery, carrots, and onions into large cubes.

    Put a drizzle of extra virgin olive oil in the pressure cooker, and when it’s at temperature, quickly sauté the vegetables over medium heat.

  • Once the soffritto is cooked and the onion is starting to turn transparent, it’s time to add all the other ingredients.

    I first pour the water to create a light broth with the vegetables, then add the lentils and finally the herbs.

  • Once you’ve added all the ingredients, close the pressure cooker and bring it to pressure, lower the heat, and cook for 12 minutes from the whistle.

    In this recipe, the amount of water is very important because if you add too little, the lentils could burn during cooking, but if you add too much, they’ll be too liquid.

    After 12 minutes, you can open the pot, check the lentils, and adjust the salt.

    Remove the leaves and spices, and it’s ready to go to the table.

Plating Suggestions:

If you are using lentils as a side dish, I recommend placing them in a large serving dish where everyone can take as much as they like. Alternatively, if you want to create individual portions, you can go with lentils and cotechino in a glass.

Wine Pairing with Stewed Lentils

Stewed lentils cooked in the pressure cooker pair well with a full-bodied and flavorful red wine. My recommendation is to serve the stewed lentils with Montepulciano or Barolo.
