  • 1 onion
  • 1 carrot
  • 1 stalk celery
  • 3 cups tomato purée
  • to taste pepper
  • to taste salt
  • 1 tablespoon extra virgin olive oil

Procedure

The secret to obtaining a good sauce with pork ribs and sausages lies in the initial cooking. Here’s the complete recipe with steps to follow.

  • First, I recommend making the classic soffritto with celery, carrots, and onions. Put a drizzle of oil in the pan over high heat and sauté for a couple of minutes.

  • When the soffritto sizzles, add the pork ribs. Toast the pork ribs over high heat on all sides.

  • When the ribs are cooked externally on all sides, remove them from the pot. Add the sausages and sear them on all sides.

  • When the sausage is seared, put the ribs back in the pot and add the tomato purée.

    If the purée does not completely cover the meat, add a little tap water.

  • All that’s left is to cook everything over medium heat, semi-covered, for 2 hours.

    At the end of cooking, serve with soft polenta.
