  • 1 roll shortcrust pastry
  • 2 cups béchamel sauce
  • 3 artichokes
  • 3.5 oz grated Grana Padano cheese
  • 1 pinch pepper
  • 1 pinch salt

Procedure

Here is the recipe to create a delicious savory pie with artichokes. You can use ready-made rolls or follow my recipe to make homemade shortcrust pastry or quick puff pastry.

  • First, I recommend cleaning the artichokes to remove the inner choke and tough outer leaves. If you’re unsure how to do it, you can follow my recipe to clean artichokes perfectly.

  • Sauté thinly sliced artichokes in a pan with a drizzle of oil. In a few minutes over high heat, the artichokes will become crispy.

    When they are cooked, set them aside in a bowl until ready to use.

  • Prepare the desired dough and roll it out if you decided to make it fresh. If you are using a pre-made dough, open it.

    Cut the dough to completely cover the baking pan you decided to use.

  • Now it’s time for the béchamel sauce. I recommend following my homemade béchamel sauce recipe, but you can also use the ready-made brick version.

    The béchamel sauce should be at room temperature to avoid cooking the base of the savory pie with artichokes.

  • In a large bowl, mix the béchamel sauce, grated Grana Padano cheese, and artichokes. Season with salt and pepper, and pour everything into the baking pan.

    Bake in a preheated oven at 356°F (180°C) in static mode for about 35-40 minutes, until the crust of the savory pie with artichokes is slightly golden. When it’s ready, take it out of the oven.
