Steps

  • To prepare the shortcrust pastry, start by beating the eggs with the sugar until you obtain a light and frothy mixture. Then add the sunflower oil and mix well. Sift the flour, baking powder, and vanillin together, and gradually combine these ingredients with the egg and sugar mixture. Knead until you form a smooth and homogeneous dough that you will let rest in the refrigerator for about 30 minutes, wrapped in plastic wrap.
In the meantime, prepare the filling by peeling and cutting the apples into pieces. To prevent them from browning, season them with lemon juice. Then add the sugar, raisins previously soaked in warm water, a generous sprinkle of cinnamon, and chopped walnuts. Mix everything gently.

Melt the butter in a pan, add the breadcrumbs and with the help of a spatula mix the ingredients, then turn off the burner.

Preheat the oven to 350°F (180°C). Roll out the shortcrust pastry with a rolling pin on a floured pastry board, it should be about 1/4 inch thick.

Use one-third of the dough to line a previously buttered and floured pan (about 9-10 inches in diameter).
Pierce the bottom with a fork and spread the buttered breadcrumbs on the base before

  • then the apple, raisin, cinnamon, and walnut filling.

  • Take the remaining dough and create strips to decorate with a classic lattice.
Bake the tart for about 35 minutes, until the surface is well golden and crispy.

  • Once cooked, let it cool completely before removing it from the mold.
A sprinkle of powdered sugar before serving and enjoy!

Storage, Tips

To best preserve the apple, cinnamon, raisin, and walnut tart, it is advisable to store it at room temperature, covered with a clean cloth or inside an airtight container, to maintain its freshness for 2-3 days. If you want to extend its preservation, you can place it in the fridge, where it will last up to 5 days; just remember to leave it at room temperature for a few minutes before serving.

If there is leftover shortcrust pastry, you can use it to create delicious cookies. Roll out the remaining dough, cut cookies with the shapes you prefer, and bake them in a preheated oven at 350°F (180°C) for about 12 minutes, until they are lightly golden. They will be perfect to accompany tea or coffee!
