Ingredients

  • 9 oz carrots
  • 1 cup sugar
  • 2 eggs
  • 2/3 cup milk
  • 1/2 cup sunflower oil
  • 1 cup almond flour
  • 2 1/4 cups all-purpose flour
  • 1 packet vanillin
  • 1 packet baking powder
  • 5 tsp orange extract

Steps

  • Preheat the oven to 350°F and prepare a silicone mold by lightly greasing it or using a non-stick spray.

    In a bowl, beat the eggs with the sugar until light and frothy. Add the sunflower oil and milk to the egg and sugar mixture, mixing well. Add the finely chopped carrots and orange extract, mixing uniformly.

    Sift the all-purpose flour, almond flour, baking powder, and vanillin. Add these dry ingredients to the mixture and stir until you get a homogeneous consistency.

    Pour the mixture into the prepared silicone mold, smoothing it with a spatula. Bake the cake in the preheated oven for about 40/50 minutes or until golden and a toothpick inserted in the center comes out clean (baking time may vary depending on the type of mold used).

    Let the cake cool in the pan, then gently remove and transfer to a wire rack to cool completely.
