Ingredients
- 3.5 tbsp butter (melted)
- 1/4 cup sugar
- 1/4 cup milk (you can also use half milk and half liquor)
- 2 eggs
- 1 packet vanillin
- 2 1/2 all-purpose flour (start with 2 1/2 cups and add more if needed)

Steps
In a bowl, mix the eggs with the sugar until you get a smooth mixture. Add the cooled melted butter, milk, and vanillin.
Gradually incorporate the flour, working the dough until you get a smooth and soft ball.
Cover the dough with plastic wrap and let it rest for 30 minutes at room temperature.
After resting, divide the dough into several balls and roll them out with a rolling pin (or with a pasta machine) until you get a thin sheet of about 1/8 inch (2-3 mm).
With a fluted cutter, cut the fritters into the desired shape (rectangles, diamonds, or with a small central cut).
Heat plenty of peanut oil in a pan and fry a few fritters at a time. Cook them until golden, about 30/40 seconds per side, turning them to even out the cooking. Drain them on paper towels.
Once cooled, decorate them with melted chocolate or sprinkle them generously with powdered sugar.

• For perfect frying, the oil should be hot (about 340-355°F or 170-180°C). If it’s too cold, the fritters will absorb oil; if it’s too hot, they risk burning!
• Want an even lighter version? Try them baked in the oven at 355°F (180°C) for about 10-12 minutes or in an air fryer.
