Chicken and Zucchini Skewers in Air Fryer (Quick and Healthy Main Dish Ready in 30 Minutes)

The chicken and zucchini skewers in the air fryer are the perfect main dish when you need something light, healthy, and quick, but still want a meal that feels like home. They are ideal for those seeking quick recipes with chicken breast and for those who love cooking fresh zucchini in the air fryer with zero fuss.

This recipe is truly ready in half an hour, it cooks without messing up half the kitchen, and it solves dinner even at the last minute. The skewers stay soft inside and slightly crispy outside, with that paprika-rosemary spice mix that makes everything more fragrant.
I used a 10-liter air fryer (Read my review on Giallo Zafferano), so I prepared long skewers. If you have a smaller model, you just need to do more batches, without changing times or temperature!

  • 2 zucchini
  • to taste salt
  • to taste pepper
  • to taste rosemary
  • to taste paprika
  • A few sprays extra virgin olive oil

Tools

  • Air Fryer
  • Skewers

Steps

  • Cut the chicken breast into regular pieces, so they will cook evenly in the air fryer.
Spray a bit of oil and add the mix of salt, paprika, pepper, garlic, and rosemary. Mix well with your hands to make sure all the spices adhere.
Cut the zucchini into not too thin slices.
Thread onto the skewers a piece of chicken and a slice of zucchini, alternating, until all ingredients are used up.
Place the skewers on the grill inside the air fryer basket and brush the surface with another splash of oil.
Cook at 375°F for 20–25 minutes, turning them halfway for even browning.
If you have a small air fryer, cook the skewers in multiple batches. With a 10-liter one, however, you can place long skewers without any problem.

How to Store Chicken and Zucchini Skewers

Store the cooked skewers in an airtight container in the fridge for 2 days. You can reheat them in the air fryer at 356°F for 4–5 minutes.
