Ingredients

- 1 1/2 cups cooked (boiled) chickpeas
- 1 egg
- 1 slice white sandwich bread (pancarrè)
- 1 shallot
- 3 1/2 tbsp breadcrumbs
- 1 pinch salt

Crispy on the outside and soft on the inside, with a rich flavor that makes them a tasty and healthy dish. Let’s prepare them together!
First, drain the chickpeas from their cooking liquid, place them in a bowl and mash them with a fork or a food processor until you obtain a puree-like consistency.
Add the egg.
Add the slice of sandwich bread.
Add the shallot (finely chopped).
And finally add the breadcrumbs.
Mix until a compact dough forms, season with salt and, if you like, add a grind of black pepper.
Form medallions about 3/4–1 1/4 inches (2–3 cm) in diameter and about 3/8 inch (1 cm) thick.
You can cook them without any fat on a preheated griddle. Wait at least 2 minutes before flipping them so they will release more easily.
Alternatively, you can fry them in a non-stick pan in which you have heated a little extra virgin olive oil. Cook the chickpea medallions over medium-high heat for about 3-4 minutes per side or until they become golden and crispy.
Serve them as you prefer, perhaps accompanied by a fresh salad or inside a sandwich.
