Ingredients

With these ingredients, you’ll get about 14/15 medallions. Double the quantities to make more!

  • 9 oz cooked, boiled chickpeas
  • 1 egg
  • 1 slice sandwich bread
  • 1 shallot
  • 0.9 oz breadcrumbs
  • 1 pinch salt
  • to taste black pepper

Steps

Crunchy on the outside and soft on the inside, with a rich flavor that makes them a tasty and healthy dish. Let’s prepare them together!

  • First, drain the chickpeas from their water, place them in a bowl, and mash them with a fork or a chopper until you get a consistency similar to puree.

    Add the egg.

    The sandwich bread.

    The shallot.

    And finally, the breadcrumbs.

    Mix until a compact dough forms, adjust the salt, and if you like, add a grind of black pepper.

    Form medallions about 1-1.5 inches in diameter and 0.4 inches thick.

    You can cook them without fats on a preheated grill. Wait at least 2 minutes before turning them, so they detach more easily.

    Or you can fry them in a non-stick pan where you’ve heated some extra virgin olive oil. Cook the chickpea medallions over medium-high heat for about 3-4 minutes per side or until golden and crispy.

    You can serve them as you like, maybe accompanied by a fresh salad or inside a sandwich.
