- 1 shallot
- 12.35 oz short hollow fusilli
- 2 sausages
- 3.53 oz cream cheese

Let’s start with the preparation of the sausages. In a large pan, heat some extra virgin olive oil over medium heat. Add the crumbled sausages and cook until they are golden. To enhance the flavor, you can deglaze the sausages with a bit of white wine.
In another pan, add some extra virgin olive oil, the chopped shallot, and sauté until the shallot is translucent and fragrant.
Add the diced pumpkin to the pan with the shallot, add a small cup of water, cover with a lid, and cook the pumpkin until it becomes soft and can be easily mashed with a fork. This will take about 15-20 minutes over medium heat.
In the meantime, bring a pot of salted water to a boil and cook the hollow fusilli according to the package instructions until al dente. Drain them, saving a cup of pasta cooking water.
When the pumpkin is ready, mash it directly in the pan with a fork.
Combine the sausages with the pumpkin cream, stir and let cook for a few minutes.
Add the cream cheese to the pumpkin and stir with a spoon until you get a smooth cream. If the cream is too thick, you can add a bit of pasta cooking water to reach the desired consistency.
Add the hollow fusilli to the pan with the pumpkin and sausage cream. Mix well so that the pasta is completely covered by the cream.
Season with freshly ground black pepper to taste and adjust the salt, if necessary.
Serve your creamy hollow fusilli with pumpkin and sausages hot, garnishing with a bit of freshly grated cheese if you prefer and enjoy your meal!
