Ingredients to Prepare Stuffed Zucchini in Air Fryer
- 5 zucchini
- 4.4 oz ricotta
- 4.4 oz Grana Padano DOP
- 1 shallot
- 2 eggs
- 0.67 cup breadcrumbs (for filling)

Steps
Wash the zucchinis and cut them in half lengthwise. Remove the ends.
Blanch the zucchinis in salted water for 5 minutes to soften them slightly. Drain and let them cool.
Hollow out the inside of the zucchinis with a teaspoon without breaking them. Roughly chop the pulp.In a skillet, sauté the chopped shallot with a drizzle of oil. Add the zucchini pulp, salt, and pepper, and let it sauté for a few minutes. Turn off the heat and let cool.
In a bowl, mix ricotta, Grana, eggs, cooked pulp, and 40 g of breadcrumbs. Adjust salt, pepper, and add a pinch of nutmeg. The mixture should be creamy but compact.Stuff each zucchini with the filling. Sprinkle the surface with some breadcrumbs and more Grana, then drizzle with a little oil.
Place the zucchinis in the basket of the air fryer and cook at 356°F for 12 minutes, until golden.
Storing Stuffed Zucchini
You can store cooked stuffed zucchinis in the refrigerator for 2 days in an airtight container. You can also freeze them: just heat them in the air fryer for 5-6 minutes at 356°F.
Tips
Better to cook without the grill! Place the zucchinis directly in the air fryer basket on perforated parchment paper or a non-stick mat. The grill is not suitable for creamy and delicate preparations like this because the filling might drip.
For an even richer filling, you can add diced cooked ham, speck, or scamorza.
If you prefer a version without eggs, you can use only ricotta and cheese, adding 1 tablespoon of flour.
Sprinkle with aromatic herbs to your liking (thyme, parsley, or basil) for a fragrant touch.
