Steps to Prepare Greek Yogurt Mini Pizzas
Start with the dough, then spend a few minutes on the topping. They’ll be ready in no time!
Pour the Greek yogurt into a bowl.
Gradually add the flour, add the instant yeast, extra virgin olive oil, and salt. Mix with a spoon until you get a soft dough.
Transfer the dough to a lightly floured work surface and knead briefly until you form a smooth ball.Once you have a smooth dough, detach small balls weighing about 0.7-0.9 oz each.
Briefly work each ball with your hands, then roll it out with a rolling pin to obtain a thin disc, about 0.16-0.20 inches thick.Place the mini pizzas on the air fryer’s basket (better with a sheet of parchment paper).
Season them with a teaspoon of tomato pulp, a pinch of salt, oregano, a drizzle of oil.
Cook at 356°F for about 10-12 minutes, add the mozzarella the last 2 minutes of cooking and cook until golden.
Storage
Greek yogurt mini pizzas can be stored at room temperature for a day, well covered. Alternatively, you can keep them in the fridge for 2 days and reheat them in the air fryer or pan when needed.
