Ingredients

  • 1 lb ground beef
  • 9 oz ground pork
  • 1/4 cup yogurt (dressing)
  • 1 tbsp breadcrumbs (add 2 if needed)
  • 1 tbsp extra virgin olive oil
  • to taste salt
  • to taste spices (onion, garlic as desired)

Steps

  • Place the ground meat in a bowl and add the yogurt dressing, oil, spices, and breadcrumbs. Mix well until you get a soft but compact dough; if it is too soft, add a bit more breadcrumbs.
    Transfer the dough between two sheets of parchment paper and roll it out with a rolling pin to form a rectangle about 1/4 inch thick.

  • Roll it up with the help of the parchment paper to obtain a well compact cylinder.
    Place the roll on a baking tray, leaving it wrapped in the parchment paper.

    Bake in a static oven at 392°F for 20 minutes, then open the paper on top and return to the oven for another 5–10 minutes, until nicely golden.

    Result: a compact giant steak, juicy inside and golden outside!

  • Remove from the oven, let it rest for 5 minutes, and cut into thin slices: your homemade fake kebab is ready.


  • After cooking, the kebab can be served in different ways; in this version, I stuffed a flatbread.

    Place the flatbread on the work surface and fill it with tomatoes, kebab, lettuce, and mayonnaise. Fold the flatbread over itself and wrap it first in a sheet of parchment paper, then in aluminum foil.
    Transfer the flatbread to an air fryer and cook at 356°F for 5–10 minutes, until well heated and slightly crispy on the outside, with the filling soft and juicy.
    Remove, discard the foil, and serve immediately: the result is an irresistible homemade kebab flatbread!

Storage

You can store the fake kebab in the refrigerator for 1 day, in an airtight container.

Tips

If you want a taste even closer to classic kebab, add a pinch of smoked paprika.
It’s perfect to serve in pita bread too!
Great even the next day, reheated in a pan.

  • What can I use instead of yogurt dressing?

    You can use two tablespoons of Greek yogurt! Do not add breadcrumbs with this substitution.
