Ingredients

  • 11 oz rigate mezze maniche
  • 12 oz swordfish
  • 9 oz cherry tomatoes
  • 1.75 oz Greek black olives
  • 2 cloves garlic
  • 3.5 tbsp dry white wine
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Tools

  • Cutting Board
  • Frying Pans

Steps

  • Cut the swordfish into cubes, removing the skin and the black part for a more delicate flavor.

In a large pan, heat a generous drizzle of extra virgin olive oil with slightly crushed garlic cloves and, if you like, chili pepper.
Add the swordfish and brown it for 2-3 minutes, deglazing with the white wine.

Let the alcohol evaporate, then add the halved cherry tomatoes and black olives.

Season with salt and pepper, then cook over medium heat for about 10 minutes, until you get a fragrant and flavorful sauce.
Meanwhile, cook the mezze maniche in plenty of salted water. Drain them al dente, reserving a ladle of cooking water. Pour the pasta directly into the pan with the sauce, stirring and adding the cooking water if needed to better combine.

Serve the mezze maniche hot, finishing with a drizzle of raw oil to enhance the flavors.
