- 1 red Tropea onion
- 7 oz cream cheese

Steps
Start by cooking the pasta in plenty of salted water according to the package instructions until al dente.
Meanwhile, prepare the pink sauce.
Take the cooked beetroot, cut it into cubes, place it in the blender jug, and blend until it becomes creamy.
Peel the Tropea onion and slice it thinly, then sauté it in a pan with a drizzle of extra virgin olive oil over low heat.
Next, add the beetroot cream, a ladle of pasta cooking water, salt, pepper, mix well, and cook over low heat for 3/4 minutes.
Then add the cream cheese, a few drops of lemon, and finally the al dente pasta, stirring gently to distribute the sauce evenly.
Adjust salt and pepper to your liking.
