Ingredients

  • 1 roll puff pastry
  • 10.5 oz spinach, frozen (about 5 cubes)
  • 8.8 oz ricotta
  • 1.8 oz grated parmesan
  • 1 egg
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • Chop the boiled and well-drained spinach coarsely. Place them in a bowl together with ricotta, parmesan, egg, and a pinch of salt. Mix until homogeneous.

  • Unroll the puff pastry.
    Spread the filling on one half, leaving some edge free.

  • Cover with the other half of pastry and seal the sides well by pressing the edges.

  • Pierce the surface with a fork, then brush with a little extra virgin olive oil.

  • Transfer to a baking tray lined with parchment paper and bake in a preheated oven at 356°F (180°C) for about 35-40 minutes, until golden.

  • Let it cool slightly and cut into squares.

Storage

You can store puff pastry rustics with ricotta and spinach:
in the fridge, well sealed in an airtight container, for 2 days;
you can reheat them in the oven or air fryer to make them crispy again;
I do not recommend freezing them after baking, better to prepare and bake them fresh.

Tips

You can add nutmeg to the filling for a spicy touch.

If you want a more golden effect, brush with beaten egg yolk instead of oil.

To make them even more delicious, add cubes of cooked ham or smoked scamorza to the filling.
