Quick Bread Loaves, Soft Inside and Crunchy Outside

Craving homemade bread, fragrant and crunchy, but don’t have half a day to dedicate to rising? These quick bread loaves are just for you! With a short rising time (about 1 hour / 1 hour and 30 min.) and a simple dough, you’ll get rustic buns, crispy on the outside and soft on the inside, perfect for serving every day.
No complex kneading or expert baker folds required: just genuine ingredients, a bowl, and a bit of patience for the rising… and the smell of freshly baked bread will fill your kitchen!

It’s a simple bread, without much fuss, that I learned to make a few years ago during the lockdown… Remember that period? We couldn’t go out, so we had to be creative! As they say, necessity is the mother of invention! Since then, I have never abandoned it, and I often make this bread on Sundays or when I simply don’t feel like going out to buy it!

Ingredients

  • 4 cups all-purpose flour
  • 13 g fresh yeast
  • 1.5 cups water (warm)
  • 1 tsp sugar
  • 9 g salt
  • 1 tsp extra virgin olive oil
  • as needed semolina (a sprinkle before baking)

Steps

Prepare the quick bread loaves!

  • Dissolve the crumbled yeast in the water, add the sugar, and stir to activate the rising process.

    In a mixer or bowl, add the previously sifted flour and gradually add the water in which you dissolved the yeast, then add a teaspoon of extra virgin olive oil and, lastly, the salt.

    The dough will be soft and sticky, and it’s perfect like this!!!

    Sprinkle a bit of flour over the dough, cover with plastic wrap, and let it rise for one hour/ one and a half hours in a warm, dry place.

    After the rising time, preheat the oven to 446°F.

    Transfer the dough to a baking sheet lined with parchment paper and floured.

    Divide the dough into three parts, using a dough scraper, and form 3 loaves, spacing them well apart.

Spray each loaf with water, sprinkle semolina on each one, then bake for about 25/30 minutes or until the bread is golden and crunchy.

Advice, Storage

Ensure the water is warm, not too hot, otherwise it might damage the yeast.

Store the bread in a paper bag to keep it fresh longer.

  • Can I use dry yeast instead of fresh yeast?

    Yes, you can replace fresh yeast with 4 g of dry yeast.


  • Can I make rolls instead of loaves?

    Yes! If you prefer rolls, divide the dough into 8-10 balls, shape the rolls, and follow the same procedure.

  • My bread is too flat, how can I make it rise better?

    If the dough doesn’t rise properly, it could be due to room temperature. Try letting it rise in a warm place, perhaps inside the turned-off oven with the light on, to encourage growth.
