Quick Sandwiches with Beef Strips, Arugula, Cherry Tomatoes, and Parmesan

Ingredients

  • 4 hard wheat rolls (ciabatta)
  • 1.3 lbs beef (strips)
  • 2 tbsp extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste arugula
  • to taste cherry tomatoes
  • Parmigiano Reggiano DOP (flakes)

Steps

  • Cook the beef strips.
    Heat the extra virgin olive oil in a pan and add the beef strips. Sauté them over high heat for a few minutes, just long enough to brown them. Season with salt and pepper and set aside with their cooking juices.

  • Warm the bread.
    Cut the ciabatta in half and place it in the air fryer at 356°F for 3–4 minutes, until slightly crispy.
    Prepare the vegetables.
    Wash the arugula, slice the tomatoes, and have the Parmesan flakes ready.
    Assemble the sandwiches.
    Add the hot beef strips, a teaspoon of their sauce, then arugula, tomatoes, and finally Parmesan.
    Close and serve.
    Eat them immediately, while they are still hot and fragrant.

    Ps: If you want to make them even fresher and creamier, add a yogurt sauce: it goes perfectly!
