In a bowl, lightly beat the egg with the sugar, yogurt, and sunflower oil.
Add the flour, cornstarch, baking powder, baking soda, and a few drops of lemon juice.
Quickly mix with a hand whisk just until you get a homogeneous batter.
Heat a lightly greased non-stick pan, pour a spoonful of batter for each pancake, and cook over low heat.
When the first bubbles appear on the surface, flip the pancake and cook for another minute.
Continue like this until the batter is finished.
Serve the pancakes hot with maple syrup!
