Ingredients
- 2 eggs
- 3/4 cup sugar
- 1 3/4 cups all-purpose flour
- 1/3 cup sunflower oil
- 1/2 cup milk
- 1 packet baking powder
- 5 figs
- 1/3 cup white chocolate chips
- 1/3 cup sliced almonds

Steps
Preheat the oven to 350°F.
Wash and dry the figs, cut 4 into pieces and 1 into slices for the surface.
In a bowl, beat eggs and sugar until light and fluffy.
Add oil and milk, mixing well.
Sift flour and baking powder and add them to the mixture, stirring gently.
Incorporate the chopped figs, 20 g of sliced almonds, and white chocolate chips.
Pour the batter into the baking pan lined with parchment paper.
Decorate with the fig slices.
Sprinkle with a bit of sugar.
Bake for 50/55 minutes. After 30 minutes, add the remaining almonds, and to help them stick better:
✅ You can lightly brush the surface with a little milk (or egg white).
→ Use a kitchen brush to slightly moisten the surface of the cake when you open the oven. Then immediately sprinkle the almonds on top. The liquid will act as “glue” and also help to brown them without burning.
✅ Or mix the almonds with a teaspoon of sugar + a splash of milk in a small bowl before spreading them on top: create a sort of “moist crumble” that clings better.If the surface colors too much, cover with a sheet of aluminum foil.
Perform the toothpick test before removing: it should come out dry.
Let it cool on a rack before serving.
