Ingredients

  • 3 eggs
  • 3/4 cup cup sugar
  • 2 cups cups blood orange (untreated)
  • 2 cups cups all-purpose flour
  • 1/2 cup cup sunflower seed oil
  • 1 packet baking powder (vanilla flavored)
  • 1/3 cup cup dark chocolate chips
  • 1 teaspoon apricot jam
  • 1 teaspoon water (boiling)

Steps

  • Preheat the oven: static 350 °F.
    Prepare the oranges: wash the oranges well and blend them whole until you obtain a cream.
    Beat eggs and sugar: in a large bowl, whip the eggs with sugar until light and frothy.
    Add oil and orange: fold in the sunflower oil and orange puree, mixing gently.
    Combine flour and baking powder: sift flour and baking powder and add gradually, mixing until you obtain a homogeneous dough.
    Incorporate chilled chocolate chips: lightly coat them with a teaspoon of flour and add to the batter, stirring gently with a spatula.
    Pour into the loaf pan greased and floured or lined with parchment paper.
    Baking: bake for 45 minutes. Do the toothpick test: it should come out clean, with a few moist crumbs.

  • Prepare the glaze: mix a teaspoon of jam with a teaspoon of boiling water until fluid.
    Brush the warm orange bread with the jam, let it cool completely.

Storage

Room temperature: 2–3 days under a bell.
