Ingredients
- 1/4 cup sunflower seed oil
- 1/2 + 2 tbsp cups granulated sugar
- 2 eggs
- lemon (juice about 3.5 tbsp – ~50 ml and grated zest)
- 1 1/4 cups all-purpose flour (00 flour)
- 5 tbsp cornstarch (cornstarch or rice starch)
- 2 tsp vanilla baking powder
- a pinch of salt
- 1 2/3 cups powdered sugar (icing sugar)
- 7 tbsp softened butter
- 2 tbsp milk
- Half vial lemon extract
- as needed yellow powdered food coloring

To make this recipe I used some products I purchased on Amazon that helped me prepare these fantastic treats:

Steps
In a bowl, whisk the oil with the sugar until well combined.
Add the eggs one at a time, mixing well after each addition.
Stir in the grated lemon zest and the strained lemon juice.
Sift the flour with the cornstarch, baking powder and a pinch of salt.
Add the dry ingredients to the wet mixture and stir until you obtain a smooth batter.
Pour the batter into the liners, filling them two-thirds full.
Bake in a preheated conventional oven at 356°F for about 18-20 minutes.
Do the toothpick test: if it comes out dry, the cupcakes are ready.
Remove from the oven and let cool completely.Beat the softened butter with the powdered sugar until light and fluffy.
Add the milk and the lemon extract, continuing to beat.
Add a pinch of yellow food coloring until you reach the desired shade.
Transfer the cream into a piping bag and decorate the cupcakes only when they are completely cool.Best wishes for Women’s Day!
Storage
Decorated cupcakes keep in the refrigerator for 3 days in an airtight container. You can make them in advance and decorate them on the same day. If you don’t decorate them right away, the cupcake bases keep up to 4 days at room temperature under a cake dome.
Tips
If you want a “mimosa” effect, you can sprinkle crumbs of sponge cake or yellow cookie crumbs over the cream.
Don’t have food coloring? No problem! You can leave the cream white and add edible yellow flowers or candy on top.
For a fresher effect, you can replace the buttercream with a lemon mascarpone cream.
