Anchovy and Potato Pie

The anchovy and potato pies are a tasty appetizer or second course to enjoy at any time. Anchovies are a type of bluefish, rich in omega 3. These pies made with fresh anchovies are light because they are prepared with few fats and are tasty, containing a delicately flavored filling made of boiled potatoes, shallots, raisins, pine nuts, and parsley. Moreover, air frying is very practical and faster than using an oven, achieving the same result.

Ingredients

  • 8.5 oz Anchovies (cleaned)
  • 8.5 oz potatoes (peeled, raw)
  • 0.7 oz raisins
  • 0.35 oz pine nuts
  • 2 shallots
  • to taste breadcrumbs
  • to taste parsley
  • to taste extra virgin olive oil
  • to taste fine salt
  • to taste black pepper

Preparation

To prepare the anchovy and potato pie…

  • Peel the potatoes, cut them into not too small pieces, immerse them in a pot with cold water, bring to a boil, and cook for about 20 minutes. Check the cooking by piercing them with a fork.

  • While the potatoes cook, peel and slice the shallots (or onion) and sauté them in a pan with extra virgin olive oil, then soak the raisins in a small bowl with hot water.

  • Rinse the anchovies (I took the fresh ones already cleaned) and gently dry them with paper towels.

  • When the potatoes are cooked, turn off the heat, drain them, and mash them in a bowl with a fork or potato masher.

  • In the bowl with the boiled potatoes, add the sautéed shallots, well-squeezed soaked raisins, pine nuts, and season with salt, pepper, and chopped fresh parsley, and mix.

  • Now take the two individual round baking dishes, lightly oil them and sprinkle some breadcrumbs inside.

  • Arrange the previously cleaned anchovies at the base and in a ray, pour the seasoned boiled potato mixture in the center, pressing it well with a fork or spoon.

  • Close the pie by folding the anchovies inward and sprinkle some more breadcrumbs on top.

  • Place the individual round baking dishes in the air fryer basket and cook the anchovy and potato pies for 20 minutes at 356°F. Serve them hot.

Notes

If you don’t have an air fryer, you can use a convection oven at the same temperature and minutes, preheating it.
