To prepare the chicken souvlaki…
First, in a bowl, pour the juice of half a lemon, the extra virgin olive oil, and season with fresh or dried chopped rosemary, dried oregano, dried mint, sweet paprika, and black pepper. Mix well with a fork or spoon.
Take the chicken breast and cut it into cubes not too small. Pour them into the bowl with the mix of oil, lemon juice, herbs, and spices just prepared. Let them marinate for about 30 minutes.
After the chicken marination time, skewer the cubes close together on one or more skewers.
Heat the pan or grill pan well, lay the skewers, and turn them to brown on all sides. Cook for about 10 minutes, serve them hot.
