The chicory, orange, and primo sale salad is a light, simple, and quick dish to prepare. Ideal to serve as an appetizer, a rich side dish, or a cold main course. For the recipe that is prepared in a few minutes, just cut the chicory, in my case I chose Chioggia, but early Treviso works too, add pieces of juicy orange, a bit of thinly sliced carrot, and cubes of fresh and tasty primo sale cheese. Dress it with a great extra virgin olive oil, vinegar or lemon juice, salt, and pepper.

- 2.8 oz Chioggia chicory
- 2.8 oz blond orange
- 1.8 oz cow primo sale cheese
- 0.7 oz carrot
- 0.5 oz walnut kernels
- 1 tbsp extra virgin olive oil

Steps
To prepare the chicory, orange, and primo sale salad…
Take the head of chicory, discard the damaged leaves, and pull it apart. Then wash the leaves under cold running water, place them in the salad spinner basket, and drain them well from water.
Cut the chicory into strips or pieces according to your taste and pour it into a salad bowl.
Then take the orange and peel it live, that is, along the line between the flesh and the white part which is gummy and bitter. Then cut it into slices and in four parts, obtaining small triangles.
Add the orange to the chicory and then proceed by cutting the primo sale cheese into cubes, adding this too into the salad bowl.
Cut off the ends of the carrot, peel it with the vegetable peeler, and make strips with the same tool or with a knife, cutting it into thin sticks.
Finally, add the broken walnuts to the salad bowl and dress the salad with extra virgin olive oil, vinegar, salt, and pepper.
Variations
You can replace primo sale with Greek feta, which is more flavorful, or with fresh Lombard quartirolo or Salva Cremasco cheese.
