Steps
To prepare the chive frittata…
In a bowl, break the eggs, add the chives previously washed and dried with a kitchen towel, then cut them with scissors. Season by adding salt and pepper and beat them with the hand whisk.
Pour the extra virgin olive oil into a pan and heat it. Then add the beaten eggs and cook them for about 5 minutes.
Flip the frittata to the other side taking care not to break it; you can help yourself with a spatula or a flat plate used as a lid, then flip it back into the pan.
When the frittata is golden on both sides and the interior is set, it is ready to be enjoyed. Serve it hot with the side you prefer.
