Cod Croquettes

The cod croquettes are an easy and tasty fish main course. Simply prepared with fresh cod fillet, eggs, and breadcrumbs, baked for less fat. Great to enjoy either as a main course or as an appetizer. Ideal for everyone as they contain no bones, they are very tender and crispy thanks to the double breading.

Ingredients

  • 12 oz cod (fillet, fresh, already cleaned)
  • 1 large egg
  • 1 tbsp extra virgin olive oil
  • as needed breadcrumbs
  • as needed fine salt
  • as needed black pepper

Steps

To prepare the cod croquettes…

  • Take the fresh cod fillet, already cleaned, and cut it into smaller pieces, then place them in the food processor and pulse for a few seconds until completely minced.

  • Transfer the minced cod to a bowl and shape it into elongated balls weighing about 1.5 oz each; there will be 8 pieces in total.

  • In a bowl, crack the egg, season it with fine salt, black pepper, and beat it with a fork.

  • Dip each ball in the egg, then in the breadcrumbs on a plate, and again in the egg and breadcrumbs. Continue this way until all the cod balls are breaded.

  • Finally, place the cod croquettes on the baking sheet lined with parchment paper, drizzle with some extra virgin olive oil, and sprinkle with salt.

  • Bake them in a preheated oven at 356°F for 20 minutes in ventilated mode.

  • Serve the cod croquettes hot with your preferred side or sauce.

Variations

Similarly, you can use frozen cod, ensuring to drain it well from excess water. You can also fry them in a pan for cooking.
