Cod Fillet Gratin with Tomato

The cod fillet gratin with tomato is a simple, fragrant, and delicious fish main course. Tender fresh cod fillet, already cleaned of skin and bones, is baked covered with a breadcrumb topping of cherry tomatoes, breadcrumbs, basil, and extra virgin olive oil.   • 7 oz cherry tomatoes
  • 1.06 oz breadcrumbs
  • 1 tablespoon extra virgin olive oil
  • 2 pinches fine salt
  • A few leaves basil

Steps

To prepare the cod fillet gratin with tomato…

  • First, take the cherry tomatoes, wash them, and place them in the chopper then chop them intermittently for a few seconds.

  • With the help of a fine-mesh sieve, strain the chopped tomatoes, separating the pulp from the liquid using two distinct bowls.

  • In the bowl with the tomato pulp, add the breadcrumbs and season with garlic powder, a few basil leaves torn by hand, extra virgin olive oil, salt, and pepper. Mix well.

  • Now take the fresh cod fillet (already cleaned), place it on a slightly greased baking dish, and cover the surface of the cod with the tomato and breadcrumb mixture just prepared.

  • Bake the cod in a preheated oven at 356 degrees and cook for 25/30 minutes in fan mode. Serve hot.
