Couscous with Cherry Tomatoes

For the recipe, you’ll just need to heat some water or vegetable broth to moisten the couscous, then season it with cherry tomatoes, extra virgin olive oil, and fresh basil.

  • 2.8 oz raw couscous
  • 1/3 cup water (or vegetable broth)
  • 1 tbsp extra virgin olive oil
  • A few leaves basil

Steps

To prepare the couscous with cherry tomatoes…

  • First, heat the previously prepared water or vegetable broth in a saucepan. Meanwhile, pour the couscous into a bowl.

  • Pour the hot water or broth into the bowl, moistening the couscous, and cover with a lid for a few minutes until the liquid is absorbed.

  • Meanwhile, wash and cut the cherry tomatoes in half or into quarters and wash the fresh basil leaves.

  • Season the couscous with extra virgin olive oil and fluff it up by mixing it with a spoon.

  • Add the chopped tomatoes, hand-torn basil leaves, salt, and pepper. Mix once more and serve the couscous immediately or slightly chilled from the refrigerator.

Tip

If you want an even tastier recipe, you can sauté a garlic clove in a pan and add the tomatoes or add thinly sliced red onion, preferably from Tropea, or shallots, always sliced, both raw.
