The eggless chocolate mousse is a classic dessert that is very quick and easy to prepare, perfect for enjoying at any time of the year. Only a few ingredients are needed for the recipe, even just two. First of all, fresh whipping cream chilled from the fridge and dark chocolate (I used 50% which is not too bitter) then for garnish, cocoa powder and dark chocolate chips. You can serve it alone, with some cookies or with fresh fruit.

- 1 cup cold whipping cream (chilled)
- 4.5 oz 50% dark chocolate

Steps
To prepare the eggless chocolate mousse…
Pour about two fingers of water into a saucepan and heat it on the stove.
Break the chocolate into pieces or chop it coarsely and place it in a bowl (glass or steel), then place it over the saucepan with water. Melt the chocolate using a bain-marie method, stirring it with a spatula.
While the chocolate is melting, pour the cold whipping cream into another bowl and whip it with the electric mixer for about 5 minutes.
When the chocolate is completely melted, remove the bowl from the saucepan and gradually add the whipped cream, stirring in one direction from bottom to top so as not to deflate it.
Pour the mousse into small glasses (2.5 oz each) and let them rest in the refrigerator for at least 1 hour.
Serve them with a sprinkle of unsweetened cocoa and garnish with chocolate chips.
