Endive, Carrot, and Apple Salad

The endive, carrot, and apple salad is a fresh and light salad, perfect to enjoy on its own or as a side dish to meat or fish main courses. The slightly bitter taste of Belgian endive is well balanced by the sweet flavor of carrots and the slightly tart green apple compared to other varieties. Additionally, you can enrich it with seeds, such as sunflower or pumpkin seeds, or with nuts like walnuts or even some croutons.

Steps

To prepare the endive, carrot, and apple salad…

  • Take the Belgian endive, peel it, wash it, dry the leaves with a dish towel (you can also spin them dry using a salad spinner) and slice them thinly with a knife. Place them in a bowl or salad bowl.

  • Then take the carrots, chop off the ends, wash them, and slice them thinly with a peeler or cut them into matchsticks with a knife and add them to the Belgian endive. Alternatively, you can also use a mandoline or grater.

  • Finally, wash and thinly slice the green apple and add it to the vegetables. Then dress the endive, carrot, and apple salad with apple cider vinegar, extra virgin olive oil, salt, and pepper.
