Flatbread with Sausage, Zucchini, and Cheese

The flatbread with sausage, zucchini, and cheese is a quick, easy, and tasty dish. On those days when you don’t feel like eating the usual first or second course, a flatbread can become a complete meal prepared in minutes. For the recipe, I used a pre-made flatbread, but if you have time and desire, you can make it at home. This time, I’ve decided to fill it with sausage and grilled zucchini, the only ingredient that takes a few more minutes to prepare. As for the cheese, I chose sweet provola slices in this case, but you can substitute it with mozzarella, crescenza, or any other cheese you prefer. Delicious!!!

Ingredients

  • 1 flatbread (3.5 oz)
  • 5 oz dark zucchini
  • 5 oz sausage
  • 1.8 oz provola

Steps

To prepare the Flatbread with Sausage, Zucchini, and Cheese…

  • First, wash the zucchini, remove the ends, and slice them into moderately thick slices using a mandoline, or a knife will also work fine, or even better if you have a slicer.

  • Then heat up the griddle and lay the zucchini slices on it. Cook them, turning them over until they are grilled. Once cooked, place the slices on paper towels, above and below, to absorb excess water and moisture.

  • Now take the sausage, score the casing with the knife, and remove it, then spread the sausage over the flatbread’s surface.

  • Then put the pan on the stovetop and heat it. When ready, lay the flatbread with the sausage side down. This way, the sausage will cook evenly already inside the flatbread.

  • When the sausage is cooked, remove the flatbread from the pan and continue filling it with the previously grilled zucchini and the provola, sliced in this case.

  • Finally, fold the flatbread in half and heat it for a few more minutes on each side in the pan or griddle until it is golden.

  • Serve the flatbread with sausage, zucchini, and cheese hot.

Variations

You can replace the zucchini with any other vegetable.
