The four-flavors tart is a delicious and colorful shortcrust pastry cake. The recipe was born from the idea of “recycling” various open jars of jam in the refrigerator. A classic shortcrust base made with all-purpose flour, sugar, butter, and eggs, flavored with lemon zest and filled in this case with four flavors of jam (peach, orange, raspberry, and blueberry). Ideal for breakfast, snack, or as a dessert at the end of a meal.

Steps

To prepare the four-flavors tart…

  • In the bowl of the stand mixer with the paddle attachment, place the cold butter from the refrigerator cut into cubes and the granulated sugar. Run the mixer for a few seconds until you obtain a sandy mixture.

  • Continue by adding the egg, grated lemon zest, and a pinch of fine salt. Run the mixer again, blending the ingredients well.

  • Finally, add the all-purpose flour and incorporate it with the other ingredients by increasing the speed of the mixer until the shortcrust dough becomes compact and detaches from the bowl.

  • Transfer the shortcrust dough with the dough scraper to the lightly floured work surface, form a disc about 3/4 inch high, and wrap it in plastic wrap. Then place it in the refrigerator to rest for 30 minutes.

  • After the resting time for the shortcrust dough, roll it out on the lightly floured work surface with the rolling pin to a thickness of about 1/5 inch and then gently transfer it to the tart pan.

  • Gently press the shortcrust, level the edge, and with the excess dough, create decorative strips or type of sausages that will divide the different flavors mosaic-like as in this case.

  • Fill the tart with the various flavors of jam, decorate it as you prefer, and finally bake it in a preheated oven at 355°F for 30 minutes in fan mode.

  • Once the tart is cooked, remove it from the oven and let it cool before enjoying it.
