Steps
To prepare the fried cod bites…
Take the fresh cod fillet, check that there are no bones, otherwise remove them with fish tweezers, then cut it into pieces.
Pour the flour onto a plate and coat the cod bites well then break the egg into a bowl and beat it with a fork.
Dip the bites in the egg and then again in the flour, and repeat this step once more. If necessary, add another egg.
In a pan, pour the extra virgin olive oil and heat it well. When it reaches the temperature (try dipping a toothpick, bubbles should form around it), gently immerse the bites.
Fry the cod for several minutes until they are well golden, then with a slotted spoon drain them well and transfer them to a plate covered with paper towels.
Finally, salt them and serve the fried cod bites hot.
