In the food processor, put the breadcrumbs, aromatic herbs, whole peeled garlic (optional), and one tablespoon of extra virgin olive oil. Pulse for a few seconds until everything is finely chopped and well combined. Alternatively, you can put the breadcrumbs in a bowl, chop the herbs and garlic with a knife, and mix everything with a spoon.
Take the cod fillet and dab it with paper towels to remove excess water.
Pour the breadcrumb and herb mix onto a plate and coat the cod fillet on all sides, pressing it firmly with your hands.
In a baking dish, pour one tablespoon of extra virgin olive oil and place the breaded cod fillet inside.
Bake the cod fillet in a preheated oven at 392°F and cook for about 20/25 minutes on the fan setting, until golden. Serve hot.
