Preparation
To prepare horse meatballs…
Take the horse slices, cut them into smaller pieces, put them in the food processor, and run it until the meat is very finely chopped.
Transfer the chopped horse meat into a bowl, add grated Grana Padano, grated zest of one lemon, chopped parsley, flour, salt, and pepper.
Mix well, form meatballs (each weighing 0.7 oz), and roll them in bread crumbs in a bowl.
Finally, pour olive oil into a frying pan and heat it. When it’s hot, add the meatballs and fry for about 10 minutes, browning them well.
Serve the golden and hot horse meatballs with your preferred side dish.
