- 4.2 oz horse meat (lean slices)
- 1 tbsp Grana Padano DOP (grated)
- 1 tbsp extra virgin olive oil
- 1 tbsp breadcrumbs
- 1 tsp all-purpose flour
- to taste lemon zest (grated)
- to taste chopped parsley
- to taste fine salt
- to taste black pepper

Preparation
To prepare the horse meatballs…
Take the horse slices and parsley, place them in the food processor and blend until chopped.
Transfer the chopped horse meat into a bowl, add the grated Grana Padano, grated lemon zest, extra virgin olive oil, flour, salt, and pepper.
Mix everything well, form meatballs (0.7 oz each), and coat them in breadcrumbs in a bowl.
Place the meatballs in the air fryer basket and cook for 10 minutes at 356°F.
Serve the golden and hot horse meatballs with your favorite side dish.
