The lemon seitan is a very good dish, very quick and easy to prepare. Designed for those who follow a vegan or vegetarian diet, or for those who want to try something different occasionally. It is “meat” in a vegetable version, based on gluten, usually found in blocks or burger type, plain or flavored. In my recipe, I used the plain one to then cook it in a pan with lemon juice, somewhat reminiscent of the lemon scaloppini version, but without using animal-derived products.

- 2.6 oz seitan
- 1 lemon
- 2 tbsps extra virgin olive oil

Steps
To prepare the lemon seitan…
Take the seitan and cut it into strips or pieces and flour it.
In a pan, heat the extra virgin olive oil, and when it’s hot, add the floured seitan, browning it for a few minutes while stirring it with the wooden spoon.
Then deglaze the seitan with lemon juice filtered through a sieve, dilute it with a bit of water, and add some more flour, being careful not to form lumps. This way, the lemon juice will thicken, forming a creamy sauce.
Salt, pepper, and serve the hot lemon seitan with the sauce formed, optionally straining it with the sieve to make it smooth.
