- 8 oz pumpkin (cleaned, butternut squash)
- 3/4 oz white onion
- 1/2 oz Grana Padano DOP
- 1 egg
- 1 tbsp extra virgin olive oil
- 1 tbsp breadcrumbs
- to taste rosemary

- to taste nutmeg

Preparation
To prepare the light pumpkin flan…
Take the pumpkin, remove the peel, seeds, and cut it into cubes about 3/4 inch, then peel and slice the onion.
Pour water into a small pot, place the steamer basket on top, and put the chopped pumpkin and onion inside. Cover the basket with a lid and steam the pumpkin and onion for 15/20 minutes, checking doneness with a fork. Alternatively, you can use a steamer.
Once the pumpkin and onion are soft, remove them from the basket and place them in the food processor.
In the food processor, add the Grana Padano, egg, nutmeg, sage, rosemary, salt, and pepper. Blend for several seconds until everything is finely chopped and well combined.
Then pour the mixture into a cocotte greased with extra virgin olive oil and sprinkled with breadcrumbs.
Place the cocotte in the air fryer basket and cook the flan at 392°F for 20 minutes. Alternatively, you can use the oven with fan mode. Serve it hot.
