Linzer cookies are delicious shortbread cookies made with all-purpose flour, buckwheat flour with its characteristic flavor, almonds, hazelnuts, and spices. The name recalls the famous Austrian cake, the Linzer torte, from the city of Linz, but it is also known in Germany and South Tyrol. Enjoy them for breakfast, as a snack, or after meals. They are also perfect as Christmas gifts for your loved ones.

Ingredients
- 1 3/4 cups all-purpose flour (+ as needed for the work surface)
- 2/3 cup butter (cold from the fridge)
- 2/3 cup raspberry jam (about)
- 3/4 cup buckwheat flour
- 2/3 cup granulated sugar
- 1/2 cup blanched almonds
- 1/2 cup whole hazelnuts (or peeled)
- 1 egg
- 1 lemon
- 1 packet vanillin
- 1 pinch fine salt
- as needed ground cloves (or powdered)
- as needed ground cinnamon
- as needed powdered sugar

Steps
To prepare the Linzer cookies…
In the bowl of the stand mixer with the paddle attachment, work the cold butter from the fridge with the sugar until you get a sandy consistency.
Now add the egg and incorporate it into the butter and sugar mix.
Finally, add the all-purpose flour, buckwheat flour, finely ground almonds, finely ground hazelnuts like flour with the food processor, grated lemon zest, vanillin, ground cinnamon, ground cloves (or powdered), and a pinch of fine salt.
Work the dough one last time with the stand mixer, increasing the speed until it starts to come together and detach from the bowl.
Transfer the dough to a lightly floured work surface, quickly shape it into a disk about 3/4 inch thick, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.
After the dough has rested, roll it out to a thickness of 1/5 inch with the rolling pin on a lightly floured work surface.
With the cookie cutters, make a total of 54 cookies, half of which are plain and the other half with a hole in the center, and place them spaced apart on a parchment-lined baking sheet.
Bake the cookies in a preheated oven at 356°F and cook them for about 10–12 minutes in ventilated mode.
Once the cookies are baked, remove them from the oven and let them cool slightly, then take the cookie without the hole, fill it with jam, and place the other cookie on top. Dust with powdered sugar.
