Preparation
To prepare the meatloaf with artichokes…
First, in a pot, heat water to boil the artichokes. When it boils, add the still frozen artichokes and cook them for 10/15 minutes after resuming the boil.
While the artichokes cook, in a bowl, place the ground veal, add the egg, grated cheese, breadcrumbs, salt, and pepper and mix well with a fork.
Once the artichokes are cooked, drain them well, then sauté them in a pan for a few minutes to evaporate excess water and make them crispier. Season with salt and pepper.
Place the artichokes in a food processor equipped with blades or a chopper and chop them finely.
Spread the ground meat on a sheet of parchment paper and flatten it with a rolling pin, giving it a rectangular shape (it should not be too thin), then stuff it with slices of cooked ham, sliced Edam cheese, and artichokes, leaving the edges free by about 1 cm.
Roll the meatloaf from the long side, using the parchment paper, pressing and sealing the meat well to expel air and close all the edges.
Brush the surface of the meatloaf with oil and roll it in breadcrumbs, then wrap it in the parchment paper, closing it like candy so that it stays soft inside.
Transfer the meatloaf to a baking dish and bake it in a preheated oven at 350°F for 30 minutes in convection mode, then open it from the parchment paper and cook it for 5 minutes in grill mode.
Serve the meatloaf with artichokes hot with your favorite side dish.
