Steps
To prepare the nougat parfait without eggs…
First, cut the nougat into smaller pieces and chop it finely with a knife (I left some chunks) or you can chop it using a food processor.
Then pour the fresh whipping cream into a bowl and start whipping it with an electric beater. When it starts to thicken, add the sugar and continue until it’s fully whipped. Be careful not to overwhip it.
Once the cream is whipped, gradually incorporate the chopped nougat, stirring in one direction.
Pour the cream and nougat mixture into silicone molds, leveling them well with the spatula, then place them in the freezer for at least 3 hours until they harden.
Before enjoying them, take them out of the freezer 10/15 minutes beforehand and garnish with nougat pieces and a drizzle of honey as desired.
