The orange cake is very easy and quick to prepare. A soft, wholesome cake made with flour, butter, sugar, eggs, orange juice and zest that give it a pleasant citrus aroma and flavor. Great for breakfast or an afternoon snack. For a richer version, you can add chocolate chips.

- 1 cup granulated sugar
- 1/3 cup butter
- 2 eggs (at room temperature)
- 2 oranges (peel edible)

Steps
To prepare the orange cake…
First, melt the butter in a small saucepan over low heat, taking care not to burn it, and let it cool slightly.
Wash the oranges, grate the zest and squeeze the juice, setting both aside for the moment.
Break the eggs, pouring the whites into one bowl and the yolks into another.
With the mixer, beat the egg whites until stiff peaks form (the bowl should not drip when turned upside down).
Now beat the yolks with the granulated sugar until pale and fluffy.
In the bowl with the yolks and sugar, add the melted butter, the orange juice, the grated zest, the milk and a pinch of salt. Combine everything with the electric mixer.
Then add the sifted all-purpose flour together with the baking powder. Mix everything with the mixer or a spatula, avoiding lumps.
Finally, fold in the beaten egg whites using a spatula from the bottom up, in one direction only.
Pour the batter into a nonstick or greased and floured cake pan. Then bake the cake in a preheated oven at 392°F in the conventional (static) setting for 30/35 minutes. Check doneness by inserting a toothpick; it should come out dry.
Once baked, remove from the oven and let it cool completely before dusting with powdered sugar.
Storage
Store in an airtight cake container or wrapped in plastic wrap, in the refrigerator for 3/4 days.
