The pasta with shrimp, stracciatella, orange, and pistachios is a simple yet refined main dish. A recipe designed for Valentine’s Day, but you can prepare it at any time of the year by replacing the orange with lemon. For the pasta, I used beetroot pasta, even with heart shapes to stay on theme, but any other pasta format of your choice will work. The sauce is made with shrimp, fresh and delicious stracciatella, orange zest, chili pepper, and chopped pistachios.

- 10 oz shrimp (frozen)
- 8.5 oz pasta (durum wheat semolina)
- 7 oz stracciatella
- 1 orange
- 1 clove garlic
- as needed chopped pistachios

Steps
To prepare pasta with shrimp, stracciatella, orange, and pistachios…
First, heat the water in the first pot to cook the pasta. When it boils, add the pasta and cook it for the minutes indicated on the package.
Meanwhile, heat the water in another pot to boil the frozen shrimp. When it boils, add the shrimp and cook them for the minutes indicated on the package, then drain and let them cool.
When the shrimp are warm, remove any shells and tails if present. Then, take a pan, add the extra virgin olive oil, and brown a whole peeled garlic clove.
Remove the garlic, add the shrimp, and sauté for a few minutes.
Once the pasta is cooked, drain it, reserving a little cooking water, and add it to the pan with the shrimp.
Season the pasta with grated orange zest, salt, pepper, and chili pepper. Sauté for a few minutes, adding a little cooking water.
Plate the pasta, adding the stracciatella and chopped pistachios. If desired, grate more orange zest on top. Serve the dish hot.
Variations
You can replace the orange with lemon when it’s out of season. Instead of frozen shrimp, you can use fresh ones, after cleaning them.
