The pasta with yellow and red cherry tomatoes and creamy cheese is a colorful, simple, and delicious dish. It is prepared in a few minutes and is ideal to enjoy even as a “cold pasta.” For the recipe, I used penne rigate (you can choose the pasta shape or type you prefer) which are then dressed with cherry tomatoes, yellow and red, sautéed in a pan with shallots, fresh spreadable cheese, and basil.

- 1.8 oz yellow cherry tomatoes (yellow)
- 1.8 oz red cherry tomatoes (red)
- 1.8 oz fresh spreadable cheese

To prepare the pasta with yellow and red cherry tomatoes and creamy cheese…
First, heat water in a pot to cook the pasta, in this case, penne rigate. Once it boils, add the penne and cook for the minutes indicated on the package.
While the pasta is cooking, pour the extra virgin olive oil into a pan and sauté the peeled and sliced or chopped shallot.
Wash the yellow and red cherry tomatoes, cut them in half, and add them to the pan. Cook them for 5/10 minutes, covering with a lid and adding a little water to soften them.
Once the tomatoes have wilted, remove the lid and let the liquid formed during cooking evaporate.
After the pasta’s cooking time has passed, drain it (reserving a little cooking water), add it to the pan with the tomatoes, and sauté for a few minutes.
Add the fresh spreadable cheese, salt, pepper, and a little cooking water to mix everything well; it should be creamy.
Finally, add the washed and hand-torn basil leaves. Serve the dish hot right away.
Tip
If you don’t enjoy being in front of the stove during the hot season, you can try the same recipe in a “cold pasta” version. Chop the tomatoes and shallots raw, add them to the bowl, add the cooked pasta rinsed under cold water to stop the cooking process, and season it in the same way.
