Pavesini with Cream, Strawberries, and Pistachio Cream

  • 1 cup whipping cream
  • 1 cup strawberries
  • 2 tbsp powdered sugar
  • 1 tsp cornstarch
  • to taste pistachio cream

Steps

To prepare the Pavesini with cream, strawberries, and pistachio cream…

  • First, wash the strawberries well, remove stems, and cut them into pieces.

  • In a bowl, pour in the whipping cream and powdered sugar, then beat with a mixer for about 3 minutes. When whipped, add the cornstarch and continue for a few more seconds.

  • Transfer the whipped cream into the piping bag using a spatula or spoon. I recommend placing the piping bag inside a tall and wide glass or jug for easier filling.

  • Arrange 44 Pavesini on a tray or multiple plates and fill them with the whipped cream. Then add 3 or 4 previously cut pieces of strawberry, drizzle a bit of pistachio cream on each cookie with a teaspoon, and cover them with the remaining cookies.

  • The Pavesini with cream, strawberries, and pistachio cream are ready to be enjoyed immediately or let them sit in the refrigerator for at least half an hour if you prefer.

Variations

You can replace classic Pavesini with cocoa or coffee ones.

Storage

Store in the refrigerator for 1 or 2 days in an airtight container. They will tend to soften, but will still be delicious.
